Jamaican Style Curried Snow Crab Legs



4 Snow Crab Clusters
1 Teaspoon Adobo with Black Pepper Seasoning
1 Teaspoon Garlic Powder (or 2-3 garlic cloves)
2-3 Teaspoon Lawry's Season Salt
½ Teaspoon Black Pepper
9 Teaspoons Curry Powder
Cayenne Pepper (sprinkle)
1 Stalk Scallion (Optional)
1 Stalk of Thyme
½ Whole Yellow Onion (Optional)
4-6 Pimento Seeds
1 Scotch Bonnet Pepper (Optional)
4 Cups Boiling Water
½ Cup Olive Oil (or vegetable oil)
16 Inch Cast Iron Pot

Prep Time: 10 minutes. 
Cook Time: 40-42 minutes.

Instructions: Rinse your snow crab legs with water and then break each clusters apart. Place crab legs into a large mixing bowl. Add all of your powdered seasonings and rub over the crab legs. ***NOTE*** In this section, only add 6 teaspoons of the curry powder.

Heat oil in pot, then add the next 3 teaspoons of curry powder to the hot oil. Stir with a fork until all the powder have melted into the pot.

Next, add your crab legs to the pot. Stir with a fork. Then add your stalk of scallions, and thyme along with the pimento seeds. Cover the pot and allow to simmer on low heat for 10 minutes.

Then add 4 cups of boiling water to the pot. Cover and allow to cook on high-heat for 30 minutes.

Serve with steamed white rice. Or, any other provisions you wish.
