Authentic Jamaican Banana Fritters

2 Ripened Bananas
1 Cup Water
2 Teaspoon Baking Powder
½ Teaspoon Salt
1 ¾ Cups Flour
1 Cup Oil
16 Inch Cast Iron Pot

Prep Time: 5-8 minutes. 
Cook Time: 12-15 minutes.

Instructions: Place your ripe bananas into a mixing bowl. Use a fork (or wire whisk) to crush the bananas. Then add 1 cup of water, your salt, baking powder, and mix. Then add your flour and mix. Your mix should be thick enough for your fork to drop a portion into the hot oil (see the video on youtube).

Heat your oil on medium heat in a non-stick sauce pan, or cast iron pot (or whichever you use to fry foods).

Drop a fork full of the batter into the hot oil and allow to fry for 2-3 minutes (still on medium heat) and then turn to the other side. Continue to do this process until all the batter is gone.

Transfer you full cooked banana fritter to a dish lined with paper towels to drain any excess oil.

Serve alone as a snack, or for breakfast with a side of scrambled eggs, or, any other provisions you wish.
